What did the Arabs believe before Muhammad and the Islamic conquests? Why did they so easily accept Abrahamic religion, were they Christians before?

There were actually Christian paintings inside the Ka'ba during Muhammad's time, and the building itself was apparently built by an Christian Roman or Ethiopian.

We do not have a single story of pre-Islamic Arabian pagan mythology. No creation myth, no theogony, no eschaton, nothing.

Not a single myth.

We have to look for the names of their goddesses in the Qur'an for crying out loud.

The other major source is The Book of Idols (Kitāb al-Așnām) by 8th Century scholar Hisham Ibn Al-Kalbi, and we have a single manuscript.

It's been re-built a lot, the first one supposedly built by Abraham was more like a low enclosure, but in Muhammad's time this was accidentally burned and rebuilt as a cube with walls of alternating wood and stone layers. Muhammad apparently helped in the construction, guiding the placement of the black stone, but I'm not sure how true that is. It was destroyed again by the Umayyads during a siege of Mecca and rebuilt in masonry. The current one was built by the Ottomans in the 17th century but follows the same design as the Umayyad one.

We have mention of their mythology in the Mu'allaqat, which predate the Quran and Mohammed.

Also Nabataean inscriptions make reference to pre-Islamic Arab deities like Dushara or Allat or Manat or Al-Qaum.

They were polytheistic and believed in a pantheon of gods, much like the other ancient Semitic nations (Akkadians, Phoenicians, Assyrians, etc).

There were already a significant number of Jews and Christians in pre-Islamic Arabia. These were the ones to accept Mohammed as a prophet and leader and make up the bulk of his followers in the early days.

what? Mecca was the epicenter of Arabian polytheism. Every surrounding tribe sent gifts and sacrifices to the Kaaba, at the time it housed all of the Arab polytheistic gods. The inhabitants of Mecca drove Muhammad out from the very beginning, due to his monotheistic talk. They tried to assassinate him numerous times, and eventually resolved to fight an actual war against him. In the end the Muslims defeated the Meccans, and took their city, and the Kaaba. Due to its respected and revered nature, Muslim control over the Kaaba and Mecca itself resonated throughout the rest of the peninsula, but polytheism still fought well into the time of Muhammad's successors.

Other than the already existing Jewish and Christian Arabs, the polytheist Arabs in no way shape or form "easily" accepted Islam.
