Before aircraft carriers became prominent, how exactly would you go about trying to fight a battleship?

Ideally, with a bigger, more heavily armed and armored battleship.
If that wasn't available, try to slip in close enough to nail them with a torpedo spread.
fuckin shoot that shit with cannons wut

Are people seriously this fucking stupid?

Very carefully.

You attack it with another battleship. That's why post-Dreadnought navies became all about mounting the biggest guns and the most armor possible. Engagements were decided by who could bring the most battleships to bear on the enemy, and also on technological differences. Superior cannon range, fire-control systems, and crew training could make up for numerical differences.
If you can't do that, a cruiser or two with a squadron of torpedo boats might be able to overcome a battleship, but not without losses.

Depends on the era.
Pre-Dreadnought with more guns and TB's.
Dreadnaught era with bigger guns and torpedoes.
Post-dreadnaught with bigger high firing guns, torpedoes and catapult launched bombers.
Basically torpedoes, since armour would usually catch up with guns quickly making it hard to get into effective gun range without endangering your own very expensive ship.

Torpedo boats.
