Imagine having a world-class military, a nationalistic fervor that rivals Napoleon's Grande Armee, AND you just "reclaimed" a land that you believe was your birthright... Would YOU stop with a small piece of land?
I dunno it's not like he wrote two books explaining that's it necessary for Germany's survival to invade and colonize eastern europe and genocide/enslave the slavs or something.

Because the way he "fixed" the german economy was to take huge loans, steal private property from jews and homosexuals, and start huge public works he can't afford and increase the army to lower unemployment.
If he didn't keep winning wars, the economy would collapse. Because the germans will gladly live on bread and salt, and only own one pair of shoes and one coat, if that means supporting the army, but they won't do it in peace.

1. Ideological reasons. He wanted to one-up the old WWI adversaries and expand into Eastern Europe/Russia for that dere Lebensraum
2. The economy was geared up in such a way that only continuous conquest would keep the whole thing from collapsing.
Because he didn't want to. The east was always the prize.
And he also couldn't. Like, he had the possibility, yes, obviously, but it was not a realistic choice given the intertwined relationship between the German economy and a rearmament aimed towards war.
He decided to make Germany the greatest country in the World and he lost. The bigger stake you do the bigger risk you under. He did play and he lost, it was a great game though. But losers never try and they never win.
