I can't imagine France holding onto it if the U.S. really wanted to take it. Sure, France was a far greater power than the U.S. in the early 19th century, but their ability to project power across the Atlantic would have been far less, and I doubt they'd be able to stop people from just moving west, settling, and claiming it for America even if they did somehow win a war.

Britain didnt give a shit about Haiti, but they were butthurt enough about the US to seize any occasion to retrieve them.
Had the US attacked France, Britain could easily have negociated a truth in Europe and team up with France to conquer the US

At the time of purchase, it was mostly empty land, and I'm pretty sure a good portion of it was unexplored.
Besides the actual modern day Louisiana area, there were not a lot of French settlers to be found. Most of the land would be settled far down the line during muh manifest destiny.
