less than 30 is a bit over-optimistic, but its certainly not 300 either.
the earliest great helms are in the likes of the Maciejowski bible, C1240, and they survive in use till about 1350, in the form of the Pembridge Helm.
they evolve during that time, developing a more conical upper section and curved top, from the flat helms of the Maciejowski era.
if you're referring to just the flat topped helms, like the dargen, then yes, those do only last a shorter period, but its not 30 years.
anyhow, have another helm type entirely.

Also whenever and wherever you are in history, people like to look cool. What they think "cool" is exactly changes but the fact that everyone wants to look cool doesn't. Poorfags might be limited to putting some feathers on their helmet whereas the richfags might have some totally bitching looking custom thing going on.
People get into their heads that anything that looks even slightly fancy is "ritualistic" or "ceremonial" or something. You can tell if something is ceremonial if it would be literally impossible to wear in battle. You can see this in things like German Funeral-helms, which are made of very thin low-grade iron, and Swiss parade armor, which you can't articulate your arms properly in, or English bearing swords, which are just sized up versions of arming swords without any accounting for a point of balance, or a Ghanaian royal dagger where the guard is literally made out of a gilded piece of fruit. These are always exceptions, though, and for the vast majority of ornate arms and armor, they're not ritualistic or ceremonial, they're just both fancy and functional.
Think of it like guitars. What's the point of shelling out 50 gs for a Gibson Les Paul Goldtop if you never play it? It's a totally functional guitar. The equivalent to historical ceremonial arms and armor which are ornate to the point of being useless in battle, would be a guitar made entirely out of gold.

Armour didn't just serve practical purposes, the greatest of armourers were considered artists, and they put a lot of effort into shaping steel creatively. This kind of 'costume armour' was worn at societal events rather than battlefields of course and it had mostly ceremonial and plain aesthetic purposes. However, they still put a lot of effort into making it practical enough that it still deserved to be called armour. So even though many of this kind of armour would be impractically shaped and to a certain extent inhibiting, it would still be protective, assuming someone would actually dare wear it for battle. Someone who could afford this kind of armour could also afford a regular, practical field armour though, so that likely wouldn't have been the case.

The M1 helmet does cover the back of the head when worn with the original type of liner system. It was only with P64 liner was the place of the helmet changed to sit more straighter on the head thus changing the coverage.
