Also it's unrealistic Pilate would ask a question in Latin in the first place. Both because as you said (outside of government and military functions) Greek was the common tongue of the educated east, and because Jesus was at best a semi-literate who could only speak Aramaic, and maybe knew some Hebrew as well.

We only have only have one instance where Jesus may demonstrate the ability to write (John 8:6-8). Which even then is pushing it not only because it comes from the least historically reliable gospel, but because the Pharisees don't react to whatever he "wrote" in the dirt, and only react to what he says to them. So it's possible he may've merely been drawing something, but even then whatever was drawn didn't affect the course of conversation.

I don't think Pilate really spoke Latin there instead doing Greek assuming it would be a common language Jesus might know or at the very least he'd know Aramaic for his job as "Governor of Judea" and Quid Est Veritas is just how the Gospel writer recorded it. Like if a Korean translated the Assassins Creed Revalations novelization and we were discussing a scene between the Italian Ezio and the Turkish Yusuf. It might be written in Korean, but neither of the characters are speaking Korean.
