The vikings are entirely mysterious on nearly all 5 subjects, except the last - their decline. They didn't decline, but instead spread into the surrounding European landscape. This makes them interesting to historians. And fantasy writers can mold imaginative stories about them, like your picture

The difference between vikings and other civilizations are written records. Romans, Mesopotamian, Chinese, etc. all have a shit ton of written records about them. They wrote down their laws, their trade, their religious practices and even their literature, music and poetry. We can piece together a lot about their culture from these things. If we don't have any written records about a culture then there's very little historians can do and they're largely ignored.
The reason vikings are anomalous is because we have a shit ton written records... almost none of which are primary. During the "viking age" we have records of vikings from all over Europe and how different cultures interacted with them, but almost none from the vikings themselves. This is why they're so fascinating because they obviously had a huge impact on Europe but we know almost nothing about them except the legends and stories other cultures passed down about them.
