It's unassuming, plain and humble. For similar reasons Abrahamic religions (particularly Muslims) are also quite fond of white, because they're the two plainest colours possible.

It's a morning color, it's worn by monks in Orthodoxy because it represents that are dead to the world, they have crucified themselves to it for Christ. Becoming a monk is a kind of martyrdom.
