Compared to "The Colour of Magic", this live-action adaptation was actually rather good ("Going Postal" still stands out as the best one), but they really REALLY should've cast Christopher Lee as Death (as in pretty much every other adaptation of Pratchett's work).

That's why I wrote "they should HAVE cast him". Not "they should cast him". And he hasn't been dead for so long. The "Hogfather" movie is from 2006, the first live-action adaptation of a Discworld novel. Sir Christopher died last year.
He also voiced Death in "The Colour of Magic" (2009) which was unfortunately a rather flawed adaptation. And, as I've mentioned, he voiced Death in almost every other Pratchett-adaptation, be it radio serials, audiobooks or animated films.
