The point is that taking a racing line around a corner is faster than drifting around it. You might lose speed in braking, but you'll be faster out of the corner than someone going sideways. Plus you can be much more precise cornering normally than if you were trying to corner while going sideways and countersteering. Not saying you can't be precise while drifting, that's obviously not true, but it's harder to be precise that way. Especially when you have to be as precise as possible at every corner

I'll chime in here and settle this question with an easy to understand comparison: the classic video game Asteroids.
On an ideal surface with ideal traction we wouldn't need it, the vehicle could apply sufficient braking force, corner, and then apply increasing torque as they accelerate away without the wheels slipping. It's this philosophy that dominates a lot of motor sports, F1 being one such example that's been discussed already.
*However.*
When cornering it's often not an ideal surface (as in, not a specially-designed course) with ideal traction which means the wheels will reach a point of peak sheer stress that overcomes their ability to grip the road surface. This results in a catastrophic loss of control and usually ends in wacky hijinks such as careening into a crowd of onlookers. So with this in mind remember that conservation of momentum still applies, "forward" is just a relative term. What's needed is the application of thrust (normally pointing backward) in the direction of the interior of the turn, this will retain kinetic energy through the turn while countering the centrifugal force of the maneuver. This is where drifting comes in, the high angle of attack allows for a much, *much* faster turn over surfaces that offer little traction.
Does this mean drifting is ideal in all cases? No, of course not, it's actually increasingly difficult (and thus more inefficient) as traction increases until you reach a point where you're deliberately loosing control and wasting precious energy.
That's all racing really is at it's core, regardless of the type of participants.
