Differential analysis, that's also the reason why encfs makes sense only in a threat model where an adversary party has access your encrypted data only once
You want a hosting capable of delta uploads and you don't want a per-file encryption. You'll create a container and your delta-capable provider will sync only changed bits, without reference to files, names, size and whatnot.

Rsync would work for syncing only changed bytes of data. There's another software as well, that's supposed to be better than rsync in terms of speed, can't remember.

Safer as it may be, delta sync would require you to download/have the entire file locally. Not always possible in many use cases.
Considering the general risk of uploading anything online, no matter the encryption, client side encrypted data would at least make it difficult for the authorities/hosting provider to casually snoop through your data.
