Android is such a steaming pile of buggy shit, and then manufacturers inject their own bug ridden turds afterwards too. At least from a development perspective iOS is a million times better.
MacOS is a beautifully designed OS. It looks good, has great automation support for any level of experience, it's simple and clean to do easy every day tasks, and it's also possible for anyone with POSIX experience to get under the hood and really involved.
As for hardware, iPhones are just the same shit as every other mobile hardware, so you can't really complain there, the lack of hardware variation improves the software side of things.

Factory resetting it didn't fix it and apple makes it impossible to go back to iOS 9 (which didn't have this problem). Bit depth is not strongly related to colorspaces. Of course you need enough colors for a certain colorspace but 8bit can already represent more colors than the human eye can perceive, so that's not a problem. I.e. you won't find a display that can't represent a certain colorspace only because it lacks bit depth.
Bit depth is more interesting for stuff like banding.
