My current workstation is my laptop and a HP 25es I got for free. Pretty nice monitor desu.
Do I get another one for the dual monitor setup, or ditch it, and go for the ultrawidememe?

I wouldn't use either. I don't have a use for 5K professionally or for entertainment purposes. There's barely any 4K video content worth noting, older things are 1080p/720p/worse, there's basically no 5K content at all as far as I'm aware and games which could natively run at that resolution wouldn't run well enough on current hardware.
