You can play HTML5 videos without Javascript, it's up to the site developer to use the native video playback. Most of them use Javascript because they're stupid.

As far as websites, I suspect a lot of the sports streaming websites I use. I use NBC Sports, watchESPN, and a bunch of other shit to watch NFL games during the year. I can't imagine they'll be quick to switch over.

Because old games are still flash and converting them is a waste of time, and there's no point in teaching yourself making HTML5 games and moving to HTML5 when all your visitors use flash. You can just download the swf and run it in a contained swf player. A lot of games are playable this way.
