Mirasol is not just "color e-ink" you inbred fuckstain. It is a radically more complicated and hard to produce design. Qualcomm never showed off the tech as anything more than a proof of concept because it wasn't production ready at the levels for an extremely high volume consumer device. It was one of the lab pieces they drug out for trade shows to bolster their presence and woo investors.
E-ink is used because its incredibly low power, its simplistic. They operate in entirely different power domains.
