Haven't built a PC in 10 years. Got some help from IRL friend assembling something excessive. Is there any room for improvement?

If you will actually use this stuff than its pretty evenly matched.
If not, drop down to 32gb of ram or 16gb if youre just gaming.
Cut the PSU down to 200W over your maximum synthetic load estimate.
Otherwise you have room for a second 1080ti or even up to 4 desu, 1600w is a lot to work with

You'll need to spend another $1000 for OS, Case, and SSD, keyboard, mouse and monitor. Unless you have that already.
$3-4K for a rig that should be capable of bleeding edge performance for at least 5 years, and probably wont become obsolete for at least 10 years.
So, ya figure you're spending on average $350 per year to have a rig that should serve all your needs for at least a decade.

Get a 750W PSU, 1600W is way overkill
