So, I've used Ubuntu before, but I'm about to make the full time switch. What distro should I check out?

Debian or Ubuntu, when it asks you what packages or you want, turn everything off, literally everything, yes, even the "system utilities" one.
apt-get install what you need.
I personally run Debian experimental with a some specific packages pinned to sid. Ubuntu PPAs work just fine with Debian, except mumble snapshot build which you can install manually but has an impossible dependency resolution issues.

Memeing aside, almost any flavor of Ubuntu is fine. Gnome, Mint, Xubuntu. I'm personally using xubuntu and I'm pretty happy with it.

If you're a true normie, jumping from Windows, I would recommend Linux Mint. It's a heavier Linux Distro, but is still way lighter than Windows 7/8/10. Many of the things you want are built-in, and you'll find a ton of online support.

I would suggest Fedora.
Its very professional and stable.
If you are honestly asking a long time linux user's opinion, Ubuntu is trash tier. Debian is a little better, but Fedora is where its at if you are still trying to get into linux
My personal favorite is Qubes which runs virtual templates of Fedora on top of the Xen Type 1 Hypervisor. Qubes may not be the most light weight distro out their, but its super freaking neat, versatile and secure.
