I found this webm some time ago but I've no idea what they used to make it, Kizuna Ai uses something similar most likely.

It's probably in that way, since on her website you can download the model for mikumikudance, and kinect is the cheapest and easiest way to do motion tracking. It could also be handled by a single person, but I'm pretty sure there's a team behind her videos

I think she uses unity because she has done videos before were she went to the asset store to get other models and stuff. Not quite sure how the camera mapping works, maybe unity has something for that.
