What logs are stored on a router that are accessible to forensics experts? Is there a way to disable logging completely in most routers? What about in custom firmwares?

That question is pretty vague without any information on what router and OS it's running. Overall, even most consumer routers log to a certain extent.

Custom firmware wouldn't log anything more than system events without your permission. It's unlikely that commercial firmware would keep traffic logs for long and even if they did it wouldn't be too detailed. Just a bunch of IPs/domain names.
Forensics experts would probably prefer to just contact your ISP.
