You cannot "hide" your IP using torrents. Bittorent is P2P. If you are ultra paranoid do the following:

download Tor and register an Email with ProtonMail and also acquire some bitcoins via localbitcoins or something. Then buy a seedbox with your bitcoins from which you remotely dl shit, over tor of course.
Transfer data back to you over Tor via SFTP.

I don't go fully autist with some fully encrypted VPN or some such.
