pdf will depend on the application you use. If you use the Adobe cancer you will have usage and personal info encoded in your file pretty much guaranteed.

It works just fine. It does support pdf and doesn't support docx. It does have perks when it comes to some switches but you'll be totally unable to gather any metadata AND you'll be able to double check the results. See https://arxiv.org/abs/1212.3648

For png/jpg you can get something like mogrify from the imagemagick library and make a simple batch/bash script to run your images through mogrify with -strip to strip all the exif data.
