For overwatch, I'd probably say a 1070 is enough, but you might wanna spend the extra hundred ish and get the 1080 any ways.

Doom runs on Vulcan, so it literally has 200+ fps on toasters.

with my xfx 470 4gb i get 110-120fps in doom. also i think a 1080 is a bit overkill for only running games at 1080p, i mean it would work but i need to buy groceries before i buy an 800 dollar gpu lol

you could save some dosh and buy a used 980 Ti too. which is you know +/- 5% of a 1070
