Just use a light Linux distro like Debian with a basic DE or WM, then run it in QEMU. Use virt-manager for an easy GUI. I do it on my desktop and get near native performance despite my motherboard being incompatible with OS X.

If it was just a video editor I'm guessing they'd ask for FCPX and Motion experience but as it stands Apple don't have any pro tools for colour grading, vector artworking, photo editing etc. If you're designing assets in PS, AI or Au it's just more efficient and reliable importing them into Pr or AE.

Using a mac at work, can honestly say it's my guilty pleasure.
I brought my own t470p for the job and i've barely touched it when in office. Everything is just so smooth and fluid, the UX is insane.

That being said there are some inconsistancy's. If macbook pro's weren't so expensive i'll cop them once my t470p feels sluggish.
