About as trustworthy as any other program you did not write yourself.

More trustworthy than stock Android.

It's ok if you're not using Gapps and are making an active effort to use F-droid abd FLOSS apps instead of other types.

Realistically speaking, unless you have an auditable bootloader and modem (you don't), then you phone isn't 100% trustworthy no matter what you do

Never, ever. Regardless of phone and the OS it is running (Android, iOS, custom Android, etc).
LineageOS is trustworthy though, but the above remains valid. You have a PC, use that for sensitive information.
