I'm going to assume it is the Uni's as you say you can't replace the OS, in which case I'd say don't replace a damn thing, just use it for your school work and be done with it.

This is the correct answer. You don't want to do any personal stuff on a computer that has god knows what uni spyware installed. Use it for school stuff and your own laptop for everything else.

As long as Win10 is running on the metal there's little you can do to have a private workspace.
Sure, you can debloat it and tweak the privacy settings, there are a lot of settings you should look out for. Consider the possibility that the university may be checking up on your machine, either physical or long distance. Sure, that chances are practically zero they're doing this, but it pays to keep it in mind, depending on how paranoid you are.
As long as you don't fuck it up and keep it for school work, you should be ok.
