veracrypt and dm-crypt/LUKS are more geared towards file system encryption. you can encrypt filesystems as files with loop devices on linux.
i would just use tar and GnuPG instead. remember to compress and then encrypt, since you can't compress a file after its been encrypted and all patterns removed.
Just use 7zip m8, AES is as secure as it comes in terms of password encryption.

Veracrypt containers are great. 7zip, or others that use AES are great too. Take your pick.
ecryptfs is pretty good. just compress shit first. maybe do an encrypted 7zip and then contain that inside an encrypted ecryptfs folder/filesystem?
