Install a Minimal Gapps, disable everything except Google Services, on configurations, Google configuration Disable every single permission they have on your phone.
Use a fake account and don't use personal info with it, don't use Google unless it is absolutely necessary (Use DDG, Starpage, etc). Avoid give any permission to any Google app, Use F-Droid, and just use the Playstore on absolutely necessary cases.

That's the way I do it.

Forgot to add, disable every permission from Google Services, and Google PlaySyore (Except Storage, for downloading apps). LineageOS Privacy Guard do a nice job with everything else.
