I just have 1 Gmail address for important stuff and 1 throwaway Yahoo address for other shit. Do you prefer having 1 email account for everything, or several different accounts?
One for each online account so that they can't be tied to each other as well as one personal that I use for things that can be tied to my identity.
1 Gmail address for legit things that need my real name
1 Outlook account that I never use because Windows 10 has fully cucked me
1 Yahoo account for all things spam related

Besides two email addresses I've abandonned, I read all my emails through ProtonMail, some of them on my own domain names. So I've got [email protected]/ch and [email protected]/ch, + [email protected]/ch.
But not on my last name because I can't make a living of giving up my pseudonymity and because reserving a domain name for a cool email address is domain parking and because it would only show a pretty agressive use of poor technical skills.
