White LEDs are just blue LEDs with a phosphor mixture on them. It absorbs some of the blue light and fluoresces at other wavelengths, creating white.

It's kinda like how ordinary fluorescent tubes actually emit nothing but hard UV, they just paint things on them that glow in other colors when UV light hits them
