Is there much price difference?
Always use the latest architecture, especially for a premium i7 build. There is little discount for buying the old one, and you'll find it there is some bullshit feature in the new one you haven't even thought about that suddenly develops a use over the years.
My last build was a choice between Sandy Bridge or the then just new Ivy Bridge. Went Ivy Bridge and paid $20-30 more. Four-five years later added a USB3 digital video capture card that only works on Ivy Bridge and above because of USB3 architecture shenanigans that I had never considered at the time of purchase.
By buying the latest you get all those lateat bells and whistles, some of which may turn out to be important in the future. There usually isn't much of a price discount on buying the last gen and leaving yourself at risk of missing a feature for a lazy $20.

The cheapest one. They're pretty much equivalent.

Dude, that's never going to pay off. Just buy what you need RIGHT NOW for the least amount of money. Repeat this when requirements change.

It'll be 6 cores. Won't be as good as the 4 cores for current gen MUH VIDYA which is the only reason anyone buys i7's anymore.
