That's not an omelette, that's just scrambled eggs folded in half.

Tomatoes are good in omelettes, and grated cheese. Mushrooms are good too, as well as green pepper, ham and bacon.

Even just a 2 egg omelette with that stuff feels pretty filling, as long as you have it with hash browns and pancakes - coffee is optional.

My only guess would be that you mix air into the omelette when whisking the eggs, which gives it more volume. Your stomach produces ghrelin based on stomach volume.

Part of it is psychological, an omelet LOOKS bigger so your brain will think it's more food. You're also whipping the protein of the white and the fat of the yolk together with air and it poofs up way more when cooked.
