We have 11 LEDs lights that use 2xCR2032 batteries. But the batteries only last a day or two.
Is there a way I can just link them all together and plug them into the mains?

The ones I have are not strips, but individual battery powered single lights, like in the picture here.

Chances are your batteries, which each produce about 3V nominal, are wired in series. This would put your final supply voltage at roughly 6V.
You could almost certainly hack apart a phone charger (they typically produce around 5V) and simply us it in place of the batteries.

It should work by just connecting a 5V power source (just like a phone charger) to that RGB LED...
