Yup, my ISP provided router has a 3x3 802.11AC setup that provides 1.3gbps peak.
But there are better routers or access points with up to around 7gbps being the max available right now.
However most consumer devices only use 1x1, 2x2, and newer laptops and phones might have 3x3 and very rarely 4x4 antennas.
Only 3x3 and 4x4 will see speeds approaching 1gbps or more.
Though even if your devices aren't 3x3 or 4x4 a higher end router will still provide better coverage to lower end or older 1x1 and 2x2 devices.

With speeds under ~15mbps, yes downloads will effect ping. So lets say you've got someone watching youtube while you're gaming. Everytime youtube goes to buffer, it will try to draw your entire 15mbps, during that time your ping in games will be shit because your ENTIRE download bandwidth is being used by youtube.
With my speeds that isn't really the case. I can download at 500-700mbps and still have plenty of bandwidth available for games.
Further at higher congestion (with more simultaneous users) a router can be congested with too many requests at once which will cause higher ping for everyone. You can get around this with a higher end router that has more processing power, or if you have a lot of $ you can build your own enterprise grade router (or buy one) and implement packet shaping that can essentially detect when you're playing a game and specifically allow packets from your game to be processed BEFORE any other traffic on your network. This type of feature generally isn't available on lower end consumer routers however.

I have 1gbps of bandiwdth. My ISP provisions me 1024/1024 mbps at their local node. From that node there are 4 households sharing a 2.4gbps download link and a 1.2gbps upload link, this node link goes directly to my ISP's local data center a few miles away. From that data center the connection goes into my ISPs fiber backbone on huge 10-40gbps server connections.
So at ANY of these points, there could be congestion.
At my house I have 1gbps bandwidth available. My local node has 2.4/1.2gbps bandwidth, and my local data center likely has a 40/10gbps or 40/40gbps bandwidth.
If you think of your internet as a pipe supplying water (internet), then how wide the pipe is, is your bandwidth. The wider the pipe, the more you can get at once.
So your available bandwidth would be the maximum upload and download speed you can achieve.

Can your computer affect the internet speed you get? Ran a speed test on my phone and a macbook pro (pic related results) - both connected to wifi. But I ran the same test on my shitty laptop (which is connected via powerline ethernet) and only get half the speed.

Yes, not just your client devices (phones, desktops, laptops, etc) your router can bottleneck you as well. Though at only 200mbps I doubt you'll be bottlenecked except maybe on WiFi depending how old the router is.
I know from upgrading to 1gbps recently some older Marvell NICs capped out at 400mbps despite being a "gigabit" NIC

Speedtest.net uses nearby servers that may or may not be owned by your ISP, if they are then your results could be skewed to give your ISP favorable results.
Fast.com uses Netflix servers and will tell you your speeds to Netflix servers only.

Essentially it MUST have slower upload in order to give the central office tone to interpret the upstream signals from everyone else.
If it were unrestricted sure youd get more bandwidth but you tie up the central office with just your traffic and everyone else gets fucked.
The long and short of it is without laying a ton of extra cables you're limited on upload speed significantly.

Roughly 5.5% overhead for TCP/IP which means 1000mbps is at maximum throughput ~945mbps
