The time to invest with nvidia would have been with the launch of the 900 series, but looking at their stock, they didn't explode till around pascal launch.

Then you have the only reason they are so high is they are currently minimally challenged.

As much as people like to 100% discount amd, if amd challenges them at all in the professional market, that will be a massive hit to nvidia. I would honestly stand by amd is the better choice long term as the markets that amd is going into are not challenged by asics like nvidias.
