What actually is the difference between the linux distros? Why would you go for one over the other?
I know that they all use the linux kernel, and that Gentoo complies itself locally.

Distros dont matter but they come preconfigured with whatever the distro maintainers feel is good or prioritized. You can get distro x to look and behave exactly like distro y.

There really is no difference other than package managers and how the non-minimal iso is presented. Just that autistic halfwits like to argue. You can get precompiled Gentoo, and you can build Ubuntu from source. It's all the same anon.

There's the package manager. Most support both binary and source but only Gentoo has USE-flags. Some distros do quite a bit of modifications to the config files while others leave them at default and the same difference exists to how packages are handled. One distro might keep the package as vanilla as possible while another one configures or patches it in a way it deems will give the best experience for the average user.

Oh yeah... and distros usually have different time frames for how often packages are updated but then again if you want a newer version than what's available in the repository you can compile it from source yourself.

1. Package Manager
2. The software repository and how many packages it has (usually tied to the package manager but not always, ex. Manjaro, Pclinuxos, Ubuntu)
3. How often software is updated - Rolling (update software as they are released by devs, no need to reinstall, ex Aech) vs Point release (releases with specific software every X months/years with updates for certain packages mostly for security, Ex Debian) vs Semi rolling (All software updated is updated every X weeks/months to latest version, Ex Manjaro).
4. Pre installed software, desktop environment, display manager and others. Usually you can switch these around after install if what you want is in the repositories.
5. Distro specific software like OpenSUSE YAST, Mint's package manager GUI software, Peppermint's ICE. (sometimes you can port these).

just use Mint if you are new to linux it is easy to get used to. if you want to tinker with more 1337 distros, learn to use virtual-box until you find one you like better.
