This myth must die already. Gentoo doesn't perform "better" than random binary distros.
You can set it up more minimalist, but the same shit is usually not running faster because there simply aren't any super awesome compiler flags that no binary distros use that would give you even 20% performance gain (or whatever else might be noticeable by anon on his desktop or whatever) regularly.
