Make sure to disable the fuck out some "features" in gpedit and also grab something like Spybot antibeacon to block some stuff in the hosts file. Also after that you can add more stuff to block in your router. Shit is not pretty, but it works.

every window 10/server 2016 has Windows Defender build in.
This data what is send to microsoft is virus signature related

Let's say you run a self written .js or whatever on your machine.
Windows Defender will look at it, calculate hashes and send them to microsoft for better virus detection rates.
This data also includes versions of software installed on your pc
