So why is YouTube the only place to get video content in 2560x1440?

I disagree. I think the videos that are there in 1440p on YouTube look absolutely great in my IPS. I don't have 4k, though, it was either 1440p IPS or 4k TN (at the exact same price the time) and I went with not TN.

MP3 isn't an option at Youtube. The best audio you can get is generally opus @160k but it depends on the content. A lot of videos are uploaded with 128k aac audio which could mean that the 128k aac audio option is the best choice.
