How do you sort/where do you keep your hundreds of currently unused cables?
I strategically scatter them across the room, cupboards and tables in the house

I have them all thrown randomly into a single cable drawer.
I feel I should do better.
I make sure the wire is clean by giving it a wipe down (I buy unscented, alcohol-free baby wipes sore for cleaning my belongings), fold the wire a few times, wrap a rubber band or similar around it, then put it in a box. Hopefully this doesn't damage the cord but so far things have been fine.

I do the same but with a drawer and only wipe down a cable if it has visible grime.

I did go through them once, about 10 years ago, to throw out all outdated crap like SCART cables and coax network cables.
tie/fold each cable nicely in a bunt then put them in a drawer or a box.
