Does anybody know of commercially available MIDI players? Or something that would take a VST input and remap the instruments to the MIDI file?
Something I've been looking at lately, but way too expensive:

iPod Version of a MIDI player that supports SoundFonts or similar.
AND before I get banned, this isn't a personal request to review a product, I'm genuinely interested in consumer MIDI playback devices or a device that would reproduce the MIDI soundtrack in a portable format.

You're talking about a niche thing that is going to get you search results that include commercial products.
i'm not entirely sure what you're after, but if it's just a portable device to play midi files, you could always just prerender midi's into opus files or whatever and use any common pmp

Yeah I was hoping for something that would be 'live' rather than having to pre-render. Maybe an rPi with fluidsynth and an USB soundcard.

using a computer that can run a software midi player like the rpi, pocket chip i guess, chroot on an android phone, etc will probably be the cheapest way to get a good result
native midi hardware is not really a consumer thing in general, so it will likely be both expensive and geared towards music /production/ rather than just basic playback

there is barely any market for consumer MIDI. it's pretty much all studio (and so are the prices), things like roland integra-7 or yamaha motif rack xs.
