Does anyone know of an actually good video editor that will run well on most linux distros and not crash/freeze all the time?

You're fucked on FOSS. If you just need it to run on Linux and don't give a shit about licensing, you have Lightworks and DaVinci Resolve, but they're professional tools with professional learning curves.

I use blender for cutting and splicing my videos. You should be able to find a few youtube videos on how to set it up as an NLE
