That was partially solved with the gold but it doesn't generate enough gold to allow people to download new torrents on a semi-regular basis unless you have a seedbox.

Kodi doesn't transcode, it reads the file as-is and plays it. If the bitrate is too high for the connection from the server to you, then it will pause and buffer. If that doesn't happen to you, then you're fine and there's no real reason to do anything else, transcoding reduces video quality and should only be used if direct playback isn't possible. Since it's a seedbox it should have a fast connection, it all depends on how good your own download speed is most likely.

Not really, more like different use cases. Using Plex only makes sense if you use the Plex server too. The server can keep track of your library, stream (and transcode) it to any number of devices and even play it back in a regular web browser. Kodi is basically just a player with a lot of features, but it's not a media server like Plex.

I don't use Plex myself but I use Emby, which does the same thing pretty much. I use it because I have access to all my videos from a central location, from any device and my viewing progress remains synchronized no matter which device I use to play something.

Also Kodi (as a player) can work with both Emby and Plex using the appropriate plugins, I actually use it with Emby on my HTPC.
