Now half the controls don't work, some stuff is managed by 'my organization', for example Windows Defender.

Anon, if you don't want to shill out the money - just find any Pro key on the Internet. You'll get your Win 10 pro just without activation. It adds up to having the "Activate your windows" text in the bottom right corner and inability to use some of the customization options. You still can change your desktop background and such by clicking on a file you want to use.
It works with no problem for work, casual stuff, and games. You can even run WSL on it.

How about stopping doing things you don't understand? You can use default Windows' tools to get rid of all pre-installed bloatware and a minimum of registry editing to completely remove stuff you've installed by mistake (shitty toolbars and such).
