I write most of my in either python or c.
pwntools is really really nice python, but most kernel exploits are best in c.
I have never used c#, but if you need the low level flexiblity to do your exploit, c is probably best.

It's viable - there are API wrapping libraries for code injection and so on, you can use c++/cli to combine low level code and easily interop with high level code. But the big question remains: why?
