If you plan on keeping the CPU for awhile, go for the 1600. If you're just going to upgrade to Zen+ eventually anyway, get the 1400.
I play vidjas with a phenom II x6 1055t and a 1050ti.
Three 23" 1080p 75hz screens, I tend to only play on the center one though.
Even old hardware like mine works absolutely fine for 1080p and yes while 4K is around right now it is still in the realm of "enthusiast", mainstream is still 1080p and older hardware drives that just fine.
