How does /g/ back up their VPS?
I was thinking of rsyncing the root VPS directory to say, /home/anon/Documents/site, on my local computer

Ask your VPS provider to backup it for you.

what are my options if I want to take a snapshot of software installed / configuration setting on the VPS? Are there any solutions where I could automate the setup of VPS? I know, that I can take an entire image of OS with all the things setup, but I want something lighter. Is docker the only way?

and fabric script to auto deploy on new VPS from said backups
