Is it possible to do something like, installing a windows os on one small partition, then using linux as your main OS without having to select which of the 2 you want to use on boot? Then like needing to plug a usb to access that windows installed on a partition?

Obviously if you're going to mess with GRUB then you had better become a wizard at it.
Intuitively, I figure the path you're going to have to go is
>mount USB device
>load config files on USB device
>boot the menuentry found in the file
I still think you're better off with the hotpluggable SSD. Doesn't rely on shitty custom GRUB jobs and is entirely independent of Linux and your inevitably shitty partitioning.
