I'm going to buy a old Apple computer, but I'm torn between two sellers. Which seems like the better option

I grew up with a Mac Plus. It's 100% greyscale if that's what you want. I'd personally grab a 68040 machine if you want to experience 68k MacOS.

The Mac Plus is a design classic and will be looked back on in future generations as the birth of modern computing. Antique shops of 2090 will proudly stock them.
