weechat cuz why use something else? An IRC client is nothing complex, I can send stuff and read stuff. Also nice that I can automatically customize it by customizing my terminal (transparentfag here)
I used to use weechat but there was some annoying bug that I couldn't fix so I just decided to fuck ricing, installed stock irssi and have been happy with it for years now.

I use weechat because it's the first one I tried and it just works
first tried irssi but never really used it.
then hexchat for a while but i still dont use irc much.
next going to try weechat when i setup my personal machine again but i read between that and hexchat its just preferance.
znc makes more of a difference to than the clients.
I have a Quassel core on my server and then connect to that from my PC
Then quasseldroid on my tablet.
the weechat scripting api is inherently insecure, so irssi for lack of better atlernatives

Irssi is minimal in the sense that it is very bare-bones. It does not have sane defaults. Therefore I prefer Weechat. The program itself may not be minimal, but it's sane defaults mean I don't need to configure much out of the box.

I used irssi for seven years and then moved to weechat which I've been using for five years.
Tmux/screen+ weechat+irssinotifier+mosh or vpn = gold standard. Sadly my engineer friends been moving to whatsapp
