Which is the preferred method to backup a live linux server that would be best left running, but can be shutdown momentarily if needed?
Rsync? Unmounting & dd'ing? 3'rd party utilities (Filezilla and such)? Good old tar'ing?

you can rsync/tar/cp a live running system safely
just have to keep in mind that your copy will be what you'd get if the machine was turned off without shutting down
that is, if a program is actively writing to a file, your copy might not be "clean", so if you need backups of those things, you'll need to stop that software or otherwise tell it to close those files while you're backing them up
sudo rsync -avxS --progress --delete root@********.com:/{boot,} ~/Backups/********.com/
